Ingredients:

  • 4 orange roughy, cod, or sole fillets, thawed
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1/2 medium zucchini, sliced
  • 1/2 sweet red pepper, cut into strips
  • Salt and pepper to taste
  • Optional: dried oregano, thyme, paprika, breadcrumbs

Instructions:

  1. Preheat your oven to 450°F.
  2. In a small bowl, mix the mayonnaise, grated Parmesan cheese, lemon juice, and optional herbs and spices (such as dried oregano, thyme, or paprika) to create a creamy mixture.
