Ingredients:

  • 1 can (11 ½ oz.) Mandarin oranges, undrained
  • 4 eggs
  • 1/2 cup oil
  • 1 tsp vanilla extract
  • 1 package yellow pudding cake mix
  • 1 can (20 oz.) crushed pineapple, undrained
  • 1 package (3 oz.) vanilla instant pudding
  • 1 carton (8 oz.) cool whip
  • Mandarin orange slices for garnish (optional)
  • Toasted coconut flakes for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch cake pan.
  2. In a mixing bowl, whisk together the undrained mandarin oranges, eggs, vanilla and oil.
  3. Stir in the yellow pudding cake mix and beat until well mixed.
  4. Pour the batter into the greased cake pan and bake for 30 minutes or until the cake is done. Leave the cake in the pan to cool.
  5. While the cake is cooling, make the topping. In a separate bowl, mix the undrained crushed pineapple and vanilla instant pudding until the pudding is moist. Stir in the cool whip.
  6. Once the cake is completely cooled, spread the topping mixture evenly over the cake in the pan.
  7. If desired, decorate the cake with mandarin orange slices and/or toasted coconut flakes on top.
  8. Chill the cake in the refrigerator for at least 4-6 hours, or overnight for best results, before serving.
