Ingredients:

  • 2 cups rolled oats
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 cup margarine (melted)
  • 3 cups fresh berries (such as blueberries, raspberries, blackberries, or strawberries)
  • 1/4 - 1/2 cup granulated sugar (adjust based on berry sweetness)
  • 1 tbsp. cornstarch
  • 1 tbsp. lemon juice
  • Pinch of salt
  • Cooking spray or additional margarine for greasing the baking dish
  • Whipped cream, yogurt, or ice cream for serving (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with cooking spray or margarine.

  2. In a large mixing bowl, combine the rolled oats, brown sugar, flour, cinnamon, baking soda, and a pinch of salt. Stir in the melted margarine until the mixture is well combined and crumbly.

  3. Sprinkle half of the oat mixture evenly over the bottom of the prepared baking pan. Use your fingers or the back of a spoon to press the mixture down firmly to form a crust.

  4. In a separate mixing bowl, gently toss the fresh berries with the granulated sugar (adjust the amount based on berry sweetness), cornstarch, and lemon juice until well coated.

  5. Spread the berry mixture evenly over the crust in the baking pan.

  6. Sprinkle the remaining oat mixture evenly over the top of the berries.

  7. Bake the cobbler in the preheated oven for 45 minutes or until the top is golden brown and the berry filling is bubbly.

  8. Remove the cobbler from the oven and let it cool for a few minutes before serving.

  9. Serve the fresh berry cobbler warm with a dollop of whipped cream, a spoonful of yogurt, or a scoop of ice cream on top, if desired.
