Ingredients:
- 1/2 pound of bacon, chopped
- 2 chicken breasts, cooked and sliced
- 1 large green bell pepper, sliced
- 1 litre of chicken broth
- 250g (1/2 pound) brick of cream cheese
- 1 - 218 ml jar of Classico Pesto sauce (or to taste)
- 1 teaspoon of salt (or to taste)
- 1-2 dried chilli peppers, crushed (optional)
- Noodles of your choice for serving
Instructions:
- Preheat your oven to 350 degrees Fahrenheit. Lay the bacon on a cookie sheet lined with parchment paper and bake for about 25 minutes until crispy. Once cooked, chop the bacon into small pieces and set aside.
- Cook the chicken breasts, 350 degrees for about 25 minutes, if they are not already cooked, and slice into thin pieces. Set aside.
- In a large pot, sauté the sliced green bell pepper using some of the bacon greases (if available) until softened. Set aside.
- In the same pot, heat the chicken broth over medium heat. Using a whisk, dissolve the cream cheese in the heated chicken broth until well combined.
- Stir in the Classico Pesto sauce and salt. You can start with less salt and adjust to taste. Add crushed dried chilli peppers if desired for some extra spice.
- Once the mixture is heated through, add the cooked bacon, sliced chicken, and sautéed bell peppers back into the pot. Stir to combine and let it simmer for a few minutes to allow the flavours to meld together.
- Meanwhile, cook the noodles of your choice according to package instructions for al dente texture.
- Serve the creamy pesto chicken sauce over the cooked noodles.
- Optional: Garnish with chopped fresh basil, grated Parmesan cheese, or a squeeze of lemon juice for extra flavour and freshness.
